Not your Mama’s Beef stew

My husband told me this is an 11 out of 10.

The sauce is really flavorful and rich.

You could put the sauce on any noodle or potato.  Or eat it by itself!



  • 4 tablespoons of vegetable oil
  • 5 tablespoons of flour
  • 4 pounds of stew meat
  • 1 medium sweet onion diced
  • 2 cloves of garlic
  • 2 tablespoons of Mojito Lime seasoning
  • 1 ½ teaspoon salt
  • Ground black pepper
  • 2 bay leaves
  • ¾ bottle of good red wine (Cabernet Sauvignon)
  • 1 28 oz can of Puree Tomatoes (San Marzano)
  • 1 cup of dried Shiitake Mushrooms
  • 2 cups of hot water
  • 1 tablespoon of sugar
  • 2 springs of thyme
  • Small crust of Parmesan Reggiano
  • Generous Tablespoon good olive oil
  • 1 teaspoon Italian Seasoning
  • 4 tablespoons of chopped Parsley
  • ¼ cup grated Parmesan
  • Broad Egg Noodle


1. Heat oven to 350 degrees.

2. Season meat on both sides with salt, pepper and Mojito Lime seasoning.  Dredge seasoned meat in 4 tablespoons of flour till lightly coated.

3. Place mushrooms in hot water to reconstitute.

4. Heat 2 tablespoons of oil in large skillet.  Add meat in batches until brown all over.  Do not over crowd the pot.  As meat browns transfer to plate.  Continue with remaining beef .

5. Meanwhile in large stockpot heat 2 tablespoons of oil over medium heat.  Add diced onion and garlic.  Add ½ teaspoon of salt.  Cook until translucent.  Add 1 tablespoon of flour and stir immediately so that no lumps form.  Add wine and tomatoes.  Stir until heated through.  Add bay leaves, thyme, sugar, Parmesan and Italian Seasoning.

6. Drain mushrooms from water and add to stockpot.

7. Add meat and any juices.

8. Ladle some sauce into saucepan to scrape up in brown bits formed on bottom of pan.  Add sauce and bits to stockpot.  Top with a good drizzle of Olive Oil.

9. Cover and place in oven for 1 ½- 2 hours.

10. Remove from oven to rest.

Cook noodles according to directions.

Serve sauce on top of noodles and sprinkle with Parsley and grated Parmesan

This stew can be served without noodles.
