Chocolate-Chocolate Cookies

These bad boys are a chocolate lovers dream!  You can’t eat more than one….okay maybe two.

For the candy bars, I like to use ‘Vosges’ haute chocolat exotic candy bars.  They have several different flavors, yes even bacon.

My hubby likes the Red Fire Bar.  Its ingredients, Mexican ancho chipotle chiles and cinnamon with 55% cocoa.  YUM!  My fav. is Woolloomooloo, it has roasted & salted Macadamia nuts, coconut and hemp seeds.  I can find these at the Fresh Market.

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter
  • 3/4 cup packed light brown sugar
  • 1 cup bittersweet chocolate chips (60% cocoa)
  • 1 large egg
  • assortment of chocolate bars.

Directions:

Combine flour, baking soda and salt in bowl.

Melt butter and brown sugar in saucepan over low heat.  Stir in chocolate chips cover pan with lid and rest off heat.  Stir until combined and smooth.

Once cool place in electric mixer and beat of medium speed, add egg and combine.  Reduce speed to low and add flour mixture.

Roll dough out into a log, wrap in plastic wrap and stick in refrigerator for 1 hour or until firm.

Heat oven 350 degrees and put parchment paper on two baking sheets

Cut dough into slices and roll into 1″ balls.  You will have to put a little muscle into forming the balls, the dough will be tough.

Place 2″ apart on baking sheet.  Cook 10-12 minutes.

While cookies are in oven, break off dime size pieces off your candy bar and place on plate.

As soon as you remove your cookies place a piece of candy bar or mint on top, push down gently.

After a minute, the candy bar will soften and start to melt.  Use a knife to gently frost the top of the cookie.

I like to serve these with a scoop of vanilla ice cream and a few berries or mint leaves.  It makes for a very fancy dessert!!
