Easy Delicious Bibb Salad

This is a great side salad to any dinner.  I prefer it to fish dishes because of its tenderness.

It is beautiful and healthy!

I have been trying to add Radishes more into our diet.  Why?  Because Radishes, like other member of the cruciferous family (cabbage, kale, broccoli, Brussels sprouts), contain cancer-protective properties.

FAMILY RATING:

  • 1 head of live Bibb lettuce
  • 1 radish thinly sliced
  • 1/3 cup of shredded whole mozzarella cheese
  • 1 lemon
  • 1/3 cup of olive oil
  • salt and pepper
  • Your favorite crackers

I used Suzie’s Organic Flatbread Crackers.

Remove roots from Bibb head, rinse and dry lettuce.  Tear into large pieces and spread among plates.  Top each plate with 4-5 slices of radish, a bit of the mozzarella.

For dressing, squeeze juice of lemon in bowl, whisk in olive oil and add a pinch of salt and pepper.

Lightly dress salad, add a side of healthy crackers.
