Chopped Italian Salad

This salad is a beauty!  It tastes as good as it looks and is great for you too!
It takes no time to throw together and accompanies any main dish.
On top of this salad being filled with large amounts of vitamins A and C, as well as calcium, iron and numerous trace minerals.  The Lemon juice adds numerous health benefits for us.
Lemon Juice aids in Digestion, helps in promoting health skin, and even fights infection in our throats.
FAMILY RATING: 
  • 3/4 cup extra-virgin olive oil
  • 1/2 cup fresh lemon juice
  • Kosher salt and freshly ground black pepper to taste
  • 1/4 cup chopped Italian parsley
  • 1 small head fennel, chopped
  • 2 ribs celery, chopped
  • 1/2 of a small red onion, chopped (about 1 cup)
  • 2-3 cups mixed greens (romaine, butter lettuce, radicchio, and arugula) or spring mix
Juice lemon and whisk in olive oil, add salt, pepper and Parsley.

Chop Fennel, Celery, and Onion.

Place Mixed Greens in a large bowl and top with chopped Vegetables on top.

Pour oil and juice mixture on top.

Gently mix to thoroughly coat everything.

Plate and enjoy!
