Easy Mini Quiche

This is a great breakfast to throw together when you have company.  Like say Easter!!
Its quick, easy and yummy.
Save any portions you don’t use in the refrigerator and heat up in microwave for lunch or late afternoon snack.  Its filled with Protein so it will help you make through the afternoon until dinner.
  • Coking Spray
  • 8 eggs
  • 2 English Muffins
  • 2 Tablespoon Heavy Cream
  • 4 Strips of Bacon
  • Salt and Pepper to taste
  • 4 Teaspoon finely grated Parmesan Cheese
  • 1 Tablespoon Chopped Parsley

You could also add some vegetables to this.  Spinach, Diced Peppers, or Sliced Mushroom.  
You can also thrown in Feta Cheese.  If you add Feta omit the Salt and Parmesan.

Preheat oven to 400 degrees.

Spray Ramekins with Cooking Spray.  Divide English Muffin in halves and put one side in Each Ramekins.

Whisk eggs and cream in a bowl. Add pinch of salt and pepper.

Cook bacon (either in microwave or skillet) and dice.  Imagine you see me adding the bacon to the egg mixture here. 🙂

Place Ramekins on a baking sheet to make it easier to place in and out of oven.

Evenly divide egg mixture into each Ramekins and top each with teaspoon of Parmesan.

Bake for about 20-25 minutes.  Until eggs are set and firm.

Remove from oven and top with Chopped Parsley and a little more Parmesan (just because 🙂 )
