Fish & Chips

We traveled to Scotland this past summer.  Besides the beautiful lochs, hills, sheep, and castles, I loved their fish & chips.

I know, so not healthy, but when on vacation do as the locals do.  Peroni Beer or Guinness, whisky and fish & chips.  Burp!

I was having a little craving for some F & C last week, so I came up with this much healthier version, and if I do say so myself, it rocked!  The boys thought so too, even the picky one in the house!

P.S- super simple!!

  • 1 1/2 lb of Atlantic Cod, skinned and boned
  • 1/4 cup butter melted
  • 2 tablespoons lemon juice
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Paprika
  • Hot Thai Mayonnaise
  • Bag of Alexia Julienne Sweet Potato Fries (I love, love, love these things)

Preheat oven 350 degrees.

Line a baking sheet with foil, for easy clean up.

Cut fillets to individual portion size, it’s really up to you how big or small.  Just don’t go too small or it will fall apart when you transfer to plates for serving.

Melt butter in microwave, about a minute, add lemon juice and stir to blend.  Pour onto rimmed plate or open face bowl.

On one large plate or bowl add flour, salt & pepper and blend.

Using one hand place fish in butter and cover fish, place buttered fillet in flour.  Using other hand scoop flour over fillet to completely cover.  Gently shake fish and place on baking sheet.  (If you don’t use separate hands the flour mixture will become a mucky mess).

Sprinkle fillets with Paprika.

Place fish in oven and bake for 25 minutes.

Meanwhile open you bag of sweet potato fries, place them on baking sheet and bake at 400 degrees for 25 minutes.

 If you do not have two ovens, up oven temperature to 375 and bake each for 30-35 minutes placing fries on top rack.

Instead of Tartar Sauce, I topped the fish with a spicy mayo.
