Quick Quiche in a Muffin Tin

Who doesn’t love Quiche?  Though men won’t admit to it because they think its “girlie” they do love it!!
The classic French Quiche actually originated in Germany, in the medieval kingdom of Lothringen, which was under German rule. (Renamed Lorraine when it came under French control – hence, Quiche Lorraine).  The word ‘Quiche’ is derived from the German word for cake, ‘kuchen.’
These work because they are quick and easy to make and I love to have them in the fridge to pull out and heat up for a midday snack.  You can use any ingredients you have on hand to throw in.  With the garden starting to flow in all its glory, I have an abundance of options, onion, leeks, asparagus or even beans.  Don’t be scared to add anything that tickles your fancy.  If you are going to use a harder vegetable do a quick blanch to help along the cooking process.
I made a huge batch of these for the kids on the rowing team, so I mixed up the ingredients to appeal to the crowd.
Enjoy!
  • Frozen Puff Pastry
  • 6 large eggs
  • 1/4 cup heavy cream
  • 6 teaspoons of grated yellow onion
  • 1/4 teaspoon grated nutmeg
  • Salt & Pepper
  • 1 cup of cheddar cheese (or which ever cheese you choose)
  • 4 strips of bacon, chopped
  • Grated Parmesan Cheese

Optional: Diced small

  • diced tomato
  • chopped basil
  • spinach
  • peppers

Preheat oven to 400 degrees.  Grease muffin tin.

Using a fork or small whisk, beat eggs, cream, grated onion, nutmeg, salt and pepper in a small bowl until well combined.

Using a round cookie cutter with a diameter of 2 1/2″ cut nine circles from each sheet of pastry.  If you don’t have cookie cutter you can always use a glass.

Line each muffin hole with a pastry round.

Divide grated cheese and bacon evenly between pastry cases and another ingredients you choose.  Spoon a little less than 1/4 cup of egg mixture on top and sprinkle parmesan on top.

Bake for 22-25 minutes or until quiches are golden brown.   Serve warm or at room temperature.
