Poached Salmon with Avocado Puree and Pea Salad

This dish is so beautiful, delicious and it is SO good for you!  Half the list of ingredients are Super Foods so you know it is chocked full of goodness.  The recipe is from Jeffery’s Grocery in New York.
  • 1 1/2 pounds skinless Salmon fillet
  • 15 Tarragon leaves, torn
  • 2 cups of  hot vegetable Broth
  • 2 cups Sugar Snap peas, trimmed
  • 2 Avocados, skinned and pitted
  • 1 cup plain yogurt
  • 1 lime juiced, divided
  • 1/4 teaspoon ground Cumin
  • 1 tablespoon minced shallt
  • 1 cup grape or cherry tomatoes, cut in half
  • 2 tablespoons of Olive Oil
  • Arugula, or mixed greens
  • Salt and Pepper

Place cleaned Salmon in glass or ceramic dish, sprinkle with terragon and let rest for 10 minutes.  Meanwhile heat vegetable broth and cover Salmon with broth and wait 10 minutes.  Salmon will poach and then place in refrigerator to chill.

Snip Peas and remove string.  Boil water and cook peas for 2 minutes, transfer peas to ice bath to stop cooking. In bowl combine peas, tomatoes, arugula or mixed greens, olive oil, lime juice, shallot, salt and pepper and mix to combine. Take Avocado, Yogurt, juice of half lime, and cumin and process in food processor until smooth and blended.  Season with Salt and Pepper. On plate place 1/2 cup of Avocado mixture, top with 1/2 cup of pea mixture and top with slice of chilled Salmon.  Serve with lime wedges on side.

    I always have avocados on hand. I’ve never made a puree of them. Nice idea.

      Thanks! I’m going to put a batch together to try on my next Burger- I love Avocado, so why not??
