Mixed Berry & White Chocolate Chip Muffins

This muffin is delicious!  If you like white chocolate, I guarantee it will become one of your favorites.  This made 18 medium muffins, but you could load up a 12 tin and make large muffins.  This is also a great muffin to freeze and pull out when you need, or WANT it! 🙂
  • 2 cups all-purpose flour
  • 2 teaspoon baking powder
  • 3/4 cup of sugar
  • 1 cup sour cream
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon of lemon zest
  • 2 cups mixed frozen berries (or single type frozen berry)
  • 1 cup white chocolate chips
  • Powdered sugar

Preheat oven to 350 degrees and line muffin tin with liners and spray bottom with baking spray

Combine flour, baking powder and sugar in a medium bowl.  In a large bowl mix sour cream, eggs, oil and lemon zest.

Add flour to sour cream mix and stir to blend.  Carefully add berries and chips, stir until combined.

Fill each muffin cup with 1/4 cup of mix and bake for 40 minutes.

Let cool and dust tops with sprinkling of powdered sugar.
